Della Torre Tourist Farm boasts a ten-year tradition in the production of extra virgin olive oil, created by incomparably beautiful centuries-old trees.
The process of oil extraction follows a traditional procedure. A granite oil mill grinds the olives in order to obtain olive paste, which is then placed on stacked disks and later squeezed by hydraulic press, in order to separate liquid substances (oil and vegetation water) from the solid ones (olive pomace). Through a separator using different specific weights, oil is separated from water. The whole process occurs at room-temperature and the product is never exposed to heat.
